- 2 Medium zucchinis
- 1 lb Ground beef
- 1 Small onion, diced
- 2 cloves Garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 cup Marinara sauce
- 1 cup Shredded cheese (mozzarella or cheddar)
- Olive oil for drizzling
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the insides to create boats.
- In a skillet, heat olive oil over medium heat and add the diced onion and garlic. Sauté until softened.
- Add the ground beef and cook until browned. Season with Italian herbs, salt, and pepper.
- Stir in the marinara sauce and remove from heat.
- Fill each zucchini boat with the beef mixture and sprinkle with shredded cheese.
- Place the boats in a baking dish, drizzle with olive oil, and cover with foil.
- Bake for 25 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is bubbly.
- Let cool slightly before serving.
