- 1 pound ground beef
- 2 medium sweet potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup beef broth
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat a large skillet over medium heat.
- Peel and dice the sweet potatoes into small cubes.
- Chop the onion into small pieces and finely mince the garlic.
- Add olive oil to the skillet and brown the ground beef, breaking it up as it cooks.
- Once browned, remove the beef from the skillet and set aside.
- Add the diced sweet potatoes to the skillet and cook for about 5 minutes.
- Add the chopped onion and minced garlic, cooking for an additional 2-3 minutes until fragrant.
- Sprinkle the ground cumin, smoked paprika, chili powder, salt, and black pepper over the mixture and stir well.
- Pour in the beef broth and return the cooked ground beef to the skillet, mixing thoroughly.
- Cover and let simmer for 10-15 minutes until sweet potatoes are tender.
- Taste and adjust seasoning if necessary, then garnish with parsley before serving.
Notes
Avoid overcooking sweet potatoes to keep them tender but intact. Feel free to adjust spices to your taste.
