Description

A delicious and nutritious bowl combining ground beef and roasted sweet potatoes, perfect for meal prep.


Ingredients

  • 1 lb ground beef
  • 2 sweet potatoes, peeled and cubed
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 bell pepper, diced
  • 2 cups spinach

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and cube sweet potatoes, then toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 20-25 minutes until tender.
  3. In a skillet over medium heat, cook the ground beef until browned, draining excess fat.
  4. Season the beef with garlic powder, onion powder, salt, and pepper.
  5. Add diced bell peppers and cook until they soften.
  6. Stir in spinach until wilted.
  7. Assemble bowls by placing roasted sweet potatoes and beef mixture together. Serve warm.
