- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 cup beef broth
- 1 cup sour cream
- 2 tbsp all-purpose flour
- 2 tbsp olive oil
- Salt and pepper to taste
- Egg noodles or rice, for serving
Instructions
- In a large skillet, heat 2 tablespoons of olive oil over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion is soft and translucent.
- Increase the heat to medium-high. Add the ground beef and cook until browned, breaking it apart with a spatula.
- Drain the excess fat from the skillet.
- Add the sliced mushrooms to the skillet. Cook until they are softened, about 3-4 minutes.
- Sprinkle the flour over the beef and mushroom mixture and stir to combine evenly.
- Gradually pour in the beef broth while continuously stirring to prevent lumps.
- Bring the mixture to a simmer, then reduce the heat.
- Stir in the sour cream until well incorporated. Season with salt and pepper to taste.
- Serve the stroganoff over cooked egg noodles or rice.
Notes
Add a pinch of red pepper flakes for some spice or substitute Greek yogurt for a lighter version.
