- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 cup corn (fresh or frozen)
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
- Optional toppings: shredded cheese, sour cream, chopped green onions
Instructions
- Heat the olive oil: In a large skillet, heat olive oil over medium heat.
- Cook the onions and garlic: Add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 3-4 minutes.
- Brown the ground beef: Increase the heat to medium-high. Add the ground beef to the skillet. Cook until the meat is browned and no longer pink, breaking it apart with a spatula, about 6-8 minutes.
- Add the vegetables: Stir in the diced tomatoes (with their juices), kidney beans, corn, chili powder, cumin, and season with salt and pepper. Mix everything together.
- Simmer: Lower the heat and let the mixture simmer for 10-15 minutes, stirring occasionally. This will allow all the flavors to blend together.
- Taste and adjust: Taste the mixture and adjust the seasoning, if needed.
- Serve: Spoon the ground beef mixture into bowls and add your favorite toppings, such as shredded cheese, sour cream, or chopped green onions. Enjoy hot!
