Ingredients

  • 8 ounces cremini mushrooms, sliced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup full-fat sour cream
  • 2 tablespoons Worcestershire sauce
  • 8 ounces egg noodles
  • 2 tablespoons all-purpose flour
  • Salt, to taste
  • Black pepper, to taste
  • 2 teaspoons olive oil

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and minced garlic. Sauté until translucent and fragrant, about 3-5 minutes.
  3. Increase the heat to medium-high and add the ground beef, cooking until browned, breaking it apart with a spatula. Drain excess fat if necessary.
  4. Stir in the sliced mushrooms, season with salt and black pepper, and add the Worcestershire sauce. Cook until mushrooms are softened, about 5-7 minutes.
  5. Sprinkle the flour over the mixture and stir to coat.
  6. Gradually add the beef broth, stirring continuously until the sauce is smooth and thickens, about 3-4 minutes.
  7. Reduce the heat to low, fold in the sour cream, and let it simmer for about 5 minutes until thickened.
  8. Cook the egg noodles according to package instructions, drain well.
  9. Toss the noodles with the stroganoff sauce or plate noodles and ladle the beef mixture on top. Garnish with chopped fresh parsley if desired.
