- 8 ounces cremini mushrooms, sliced
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 2 cups low-sodium beef broth
- 1 cup full-fat sour cream
- 2 tablespoons Worcestershire sauce
- 8 ounces egg noodles
- 2 tablespoons all-purpose flour
- Salt, to taste
- Black pepper, to taste
- 2 teaspoons olive oil
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onion and minced garlic. Sauté until translucent and fragrant, about 3-5 minutes.
- Increase the heat to medium-high and add the ground beef, cooking until browned, breaking it apart with a spatula. Drain excess fat if necessary.
- Stir in the sliced mushrooms, season with salt and black pepper, and add the Worcestershire sauce. Cook until mushrooms are softened, about 5-7 minutes.
- Sprinkle the flour over the mixture and stir to coat.
- Gradually add the beef broth, stirring continuously until the sauce is smooth and thickens, about 3-4 minutes.
- Reduce the heat to low, fold in the sour cream, and let it simmer for about 5 minutes until thickened.
- Cook the egg noodles according to package instructions, drain well.
- Toss the noodles with the stroganoff sauce or plate noodles and ladle the beef mixture on top. Garnish with chopped fresh parsley if desired.
