Ingredients

- 2 cups cooked rice
- 1 cup mixed vegetables (e.g., bell peppers, carrots, broccoli)
- 1/2 cup kimchi
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp garlic, minced
- 1 tsp ginger, minced
- Salt and pepper to taste
- Green onions for garnish (optional)
Instructions
- In a large skillet, heat sesame oil over medium heat.
- Add minced garlic and ginger, and sauté until fragrant.
- Put in ground beef and cook until browned, breaking it up with a spatula. Season with soy sauce, salt, and pepper.
- Stir in mixed vegetables and cook until tender.
- Serve the beef mixture over cooked rice.
- Top with kimchi and garnish with green onions if desired.
