Description

Ingredients

  • 3 medium Yukon Gold potatoes, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Start by chopping the onion and mincing the garlic.
  2. Heat the olive oil in a large skillet over medium heat. Once hot, add the chopped onion and minced garlic. Sauté for about 3-4 minutes until fragrant.
  3. Increase the heat to medium-high and add the ground beef to the skillet. Cook it until browned, which should take around 5-7 minutes.
  4. Stir in the diced potatoes and the beef broth. Add the paprika, thyme, salt, and pepper for seasoning.
  5. Reduce the heat to medium-low, cover the skillet, and let it simmer for about 15-20 minutes until the potatoes are tender.
  6. Adjust seasoning if needed, and serve hot. You can garnish with fresh herbs for extra flavor.
