- 3 medium Yukon Gold potatoes, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups low-sodium beef broth
- 1 tsp paprika
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Start by chopping the onion and mincing the garlic.
- Heat the olive oil in a large skillet over medium heat. Once hot, add the chopped onion and minced garlic. Sauté for about 3-4 minutes until fragrant.
- Increase the heat to medium-high and add the ground beef to the skillet. Cook it until browned, which should take around 5-7 minutes.
- Stir in the diced potatoes and the beef broth. Add the paprika, thyme, salt, and pepper for seasoning.
- Reduce the heat to medium-low, cover the skillet, and let it simmer for about 15-20 minutes until the potatoes are tender.
- Adjust seasoning if needed, and serve hot. You can garnish with fresh herbs for extra flavor.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for longer storage. Thaw and reheat before serving.
