Ingredients

  • 1 tablespoon vegetable oil
  • 1 small onion, sliced
  • 1 bell pepper, sliced
  • 2 carrots, thinly sliced
  • 2 cups broccoli florets
  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon mirin
  • Salt and pepper to taste

Instructions

  1. Cook the udon noodles according to package instructions, then drain and set aside.
  2. In a large skillet or wok, heat vegetable oil over medium-high heat.
  3. Add the sliced onion, bell pepper, carrots, and broccoli, stir-frying until tender, about 3-4 minutes.
  4. Stir in the minced garlic, cooking for another minute until fragrant.
  5. Add the cooked udon noodles, mixing well with the vegetables.
  6. Pour in the soy sauce, oyster sauce, and mirin, tossing until well combined and heated through.
  7. Season with salt and pepper to taste.
  8. Top with chopped green onions before serving.
