- 2 pounds sweet potatoes
- 3 to 4 tablespoons extra virgin olive oil
- Kosher salt to taste
- 1/4 cup fresh cilantro, finely chopped
- 1 teaspoon lime zest or lemon zest
- 2 tablespoons fresh lime juice or lemon juice
- 1/4 cup extra virgin olive oil
- Pinch of salt to taste
Instructions
- Heat your grill to high, direct heat.
- Peel sweet potatoes and slice them lengthwise or diagonally into 1/4-inch-thick slices.
- Coat each slice with olive oil and season lightly with kosher salt.
- In a small bowl, mix cilantro, zest, lime juice, olive oil, and a pinch of salt until combined.
- Once the grill is preheated, place sweet potato slices directly onto the grill grates.
- Cover and cook for 3 to 6 minutes on each side, aiming for grill marks.
- Transfer grilled sweet potatoes to a bowl and toss with cilantro lime dressing.
- Serve hot and enjoy!
