Description

Deliciously grilled sweet potatoes coated in a vibrant cilantro lime dressing, perfect as a side dish or main event.


Ingredients

  • 2 pounds sweet potatoes
  • 3 to 4 tablespoons extra virgin olive oil
  • Kosher salt to taste
  • 1/4 cup fresh cilantro, finely chopped
  • 1 teaspoon lime zest or lemon zest
  • 2 tablespoons fresh lime juice or lemon juice
  • 1/4 cup extra virgin olive oil
  • Pinch of salt to taste

Instructions

  1. Heat your grill to high, direct heat.
  2. Peel sweet potatoes and slice them lengthwise or diagonally into 1/4-inch-thick slices.
  3. Coat each slice with olive oil and season lightly with kosher salt.
  4. In a small bowl, mix cilantro, zest, lime juice, olive oil, and a pinch of salt until combined.
  5. Once the grill is preheated, place sweet potato slices directly onto the grill grates.
  6. Cover and cook for 3 to 6 minutes on each side, aiming for grill marks.
  7. Transfer grilled sweet potatoes to a bowl and toss with cilantro lime dressing.
  8. Serve hot and enjoy!
