Description

Ingredients

  • 1 lb Shrimp
  • 1 Avocado
  • 1 cup Corn salsa
  • 1 cup Quinoa
  • 2 tbsp Olive oil
  • 2 tbsp Lime juice
  • Salt to taste
  • Pepper to taste
  • Fresh herbs (optional)

Instructions

  1. Cook quinoa according to package instructions.
  2. In a bowl, combine shrimp with olive oil, lime juice, salt, and pepper.
  3. Grill shrimp on medium heat until cooked through, about 2-3 minutes per side.
  4. In a separate bowl, mix fresh avocado and corn salsa.
