Description

Grilled Mediterranean Chicken Tacos combine classic Mediterranean flavors with the fun of a taco. Tender chicken, fresh vegetables, and creamy feta cheese all wrapped in warm tortillas make this dish a crowd-pleaser.

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 small tortillas
  • 1 cup diced tomatoes
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • Fresh parsley or cilantro, for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. Mix olive oil, oregano, garlic powder, paprika, salt, and pepper in a bowl.
  3. Coat the chicken breasts with the mixture, making sure they are fully covered.
  4. Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
  5. Remove from the grill and let rest for a few minutes before slicing.
  6. Warm the tortillas on the grill for about 30 seconds on each side.
  7. Assemble the tacos by placing sliced chicken on a tortilla, topped with diced tomatoes, cucumber, red onion, and feta cheese.
  8. Garnish with fresh parsley or cilantro. Enjoy!
