Ingredients

  • 2 pounds chicken breasts, skinless and boneless
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons lime juice
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 tablespoon olive oil
  • 4 mangoes, peeled, pitted, diced
  • 3 avocados, halved, peeled, pitted, diced
  • 1 tablespoon cilantro, finely chopped
  • 2 teaspoons lime juice
  • ½ teaspoon salt
  • ÂĽ teaspoon chili powder
  • â…› teaspoon garlic powder

Instructions

  1. Slice the chicken breasts horizontally to create thin cutlets.
  2. Marinate the chicken in balsamic vinegar, lime juice, salt, black pepper, and garlic powder for at least 30 minutes.
  3. Combine diced mango, cilantro, lime juice, salt, chili powder, and garlic powder in a bowl to prepare the salsa, leaving out the avocado.
  4. Preheat the grill to medium-high heat. Brush the chicken with olive oil and grill for about 9-10 minutes, turning occasionally, until fully cooked.
  5. Once cooked, gently fold the diced avocado into the mango mixture and adjust seasonings as needed.
  6. Top each chicken cutlet with the avocado mango salsa and serve immediately.
