- 2 pounds chicken breasts, skinless and boneless
- 2 tablespoons balsamic vinegar
- 2 tablespoons lime juice
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- 1 tablespoon olive oil
- 4 mangoes, peeled, pitted, diced
- 3 avocados, halved, peeled, pitted, diced
- 1 tablespoon cilantro, finely chopped
- 2 teaspoons lime juice
- ½ teaspoon salt
- ÂĽ teaspoon chili powder
- â…› teaspoon garlic powder
Instructions
- Slice the chicken breasts horizontally to create thin cutlets.
- Marinate the chicken in balsamic vinegar, lime juice, salt, black pepper, and garlic powder for at least 30 minutes.
- Combine diced mango, cilantro, lime juice, salt, chili powder, and garlic powder in a bowl to prepare the salsa, leaving out the avocado.
- Preheat the grill to medium-high heat. Brush the chicken with olive oil and grill for about 9-10 minutes, turning occasionally, until fully cooked.
- Once cooked, gently fold the diced avocado into the mango mixture and adjust seasonings as needed.
- Top each chicken cutlet with the avocado mango salsa and serve immediately.
Notes
Avoid over-marinating the chicken and ensure even thickness for uniform cooking.
