Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 cup tomato sauce
  • 4 large flour tortillas
  • 3 tablespoons spicy mayo
  • 1 cup fried rice
  • 1 cup nacho cheese sauce
  • 1 cup sour cream
  • 1 cup tortilla chips

Instructions

  1. Sear the ground beef in a skillet with olive oil until browned. Drain excess grease.
  2. Add diced onion and cook until translucent.
  3. Season with salt, pepper, smoked paprika, and oregano.
  4. Stir in the tomato sauce and simmer for 10-15 minutes until slightly thickened.
  5. Warm the flour tortillas to make them pliable.
  6. Spread spicy mayo evenly over the center of each tortilla.
  7. Layer the tortillas with the beef filling, fried rice, nacho cheese sauce, and crumbled tortilla chips.
  8. Roll the tortillas tightly into burritos, folding in the sides and then rolling from the bottom.
  9. Grill the burritos in a lightly oiled skillet over medium heat for 3-5 minutes per side, until golden brown and crispy.
  10. Serve immediately, optionally cut in half, with sour cream on top or on the side.
