Description

Ingredients

  • 1 onion, diced

  • 1/2 cup tomato sauce
  • 4 large flour tortillas
  • 3 tablespoons spicy mayo
  • 1 cup cooked fried rice
  • 1 cup nacho cheese sauce
  • 1 cup sour cream
  • 1 cup crushed tortilla chips

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Sauté diced onion until translucent, about 3-5 minutes.
  2. Add ground beef to the skillet, breaking it up. Cook until browned, then drain excess grease. Season with salt, pepper, smoked paprika, and oregano. Stir until fragrant.
  3. Pour in tomato sauce and simmer for 5-7 minutes until slightly thickened. Remove from heat.
  4. Spread spicy mayo on each large flour tortilla. Top with the savory beef filling, fried rice, nacho cheese sauce, sour cream, and crushed tortilla chips. Fold in the sides and tightly roll up each burrito.
  5. Heat a lightly oiled griddle or non-stick skillet over medium heat. Grill each burrito seam-side down for 3-4 minutes per side, until golden brown and crispy.
