Description

A quick and healthy recipe featuring juicy grilled chicken topped with creamy California avocado and melted cheese.


Ingredients

  • 2 chicken breasts
  • 1 ripe California avocado
  • 1 cup shredded cheese (such as Monterey Jack or cheddar)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Lime wedges for serving

Instructions

  1. Preheat the grill to medium-high heat.
  2. Mix olive oil, garlic powder, paprika, salt, and pepper in a small bowl.
  3. Brush the mixture onto the chicken breasts.
  4. Grill the chicken for 6-7 minutes on each side, or until cooked through and no longer pink inside.
  5. Place slices of avocado on top and sprinkle with cheese just before the chicken is done. Close the grill lid for a minute to melt the cheese.
  6. Remove from the grill and serve with lime wedges.

Notes
