- 2 chicken breasts
- 1 ripe California avocado
- 1 cup shredded cheese (such as Monterey Jack or cheddar)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Lime wedges for serving
Instructions
- Preheat the grill to medium-high heat.
- Mix olive oil, garlic powder, paprika, salt, and pepper in a small bowl.
- Brush the mixture onto the chicken breasts.
- Grill the chicken for 6-7 minutes on each side, or until cooked through and no longer pink inside.
- Place slices of avocado on top and sprinkle with cheese just before the chicken is done. Close the grill lid for a minute to melt the cheese.
- Remove from the grill and serve with lime wedges.
Notes
Pound or butterfly thick chicken breasts to ensure even cooking. Use a meat thermometer to check for doneness at 165°F (74°C).
