A healthy twist on a classic treat, these Greek Yogurt Brownies are rich, fudgy, and incorporate the benefits of Greek yogurt for added moisture and protein.

- 1 cup plain Greek yogurt
- 1 cup granulated sugar
- ½ cup unsweetened cocoa powder
- ½ cup all-purpose flour
- 1 tsp baking powder
- 2 large eggs (room temperature)
- 1 tsp vanilla extract
- ¼ tsp salt
- ½ cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease an 8×8 inch baking pan or line it with parchment paper.
- In a large bowl, whisk together the Greek yogurt, granulated sugar, eggs, and vanilla extract until smooth (about 2-3 minutes).
- Gradually sift in the cocoa powder, flour, baking powder, and salt, and gently stir until just combined.
- If desired, fold in the chocolate chips.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted comes out mostly clean.
- Allow the brownies to cool completely in the pan before slicing into squares.
Notes
For best results, check your brownies a few minutes before the suggested baking time to avoid overbaking. Use room temperature eggs for a uniform batter.
