Description

A healthy twist on a classic treat, these Greek Yogurt Brownies are rich, fudgy, and incorporate the benefits of Greek yogurt for added moisture and protein.


Ingredients

  • 1 cup plain Greek yogurt
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • 1 tsp baking powder
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • ½ cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8×8 inch baking pan or line it with parchment paper.
  3. In a large bowl, whisk together the Greek yogurt, granulated sugar, eggs, and vanilla extract until smooth (about 2-3 minutes).
  4. Gradually sift in the cocoa powder, flour, baking powder, and salt, and gently stir until just combined.
  5. If desired, fold in the chocolate chips.
  6. Pour the batter into the prepared baking pan and spread it evenly.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted comes out mostly clean.
  8. Allow the brownies to cool completely in the pan before slicing into squares.
