- 1.5 pounds baby potatoes
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 3 cloves garlic, minced
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice
- 4 ounces feta cheese, crumbled
- 1/2 teaspoon paprika
- Salt to taste
- Black pepper to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss the baby potatoes with olive oil, dried oregano, dried thyme, paprika, salt, and black pepper until evenly coated.
- Spread the seasoned potatoes in a single layer on the prepared baking sheet.
- Roast the potatoes for 25–30 minutes, stirring halfway through.
- Add the minced garlic to the potatoes, toss gently, and return to the oven for an additional 5 minutes.
- Remove the potatoes from the oven, drizzle with lemon juice, and sprinkle with lemon zest.
- Scatter the crumbled feta cheese and chopped parsley over the potatoes. Toss gently to combine before serving.
