Description

A Mediterranean-inspired side dish featuring roasted baby potatoes, bright lemon, and creamy feta cheese.


Ingredients

  • 1.5 pounds baby potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 3 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 4 ounces feta cheese, crumbled
  • 1/2 teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss the baby potatoes with olive oil, dried oregano, dried thyme, paprika, salt, and black pepper until evenly coated.
  3. Spread the seasoned potatoes in a single layer on the prepared baking sheet.
  4. Roast the potatoes for 25–30 minutes, stirring halfway through.
  5. Add the minced garlic to the potatoes, toss gently, and return to the oven for an additional 5 minutes.
  6. Remove the potatoes from the oven, drizzle with lemon juice, and sprinkle with lemon zest.
  7. Scatter the crumbled feta cheese and chopped parsley over the potatoes. Toss gently to combine before serving.
