- 1 pound ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 clove garlic, minced
- 1 teaspoon oregano
- 1 egg
- Salt and pepper to taste
- 1 cup orzo pasta
- 1 lemon, zest and juice
- 2 tablespoons olive oil
- 1 cup chicken broth
- Feta cheese for serving
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, minced garlic, oregano, egg, salt, and pepper in a bowl. Mix until well combined. Be careful not to overmix.
- Form the mixture into meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.
- Bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C).
- Cook the orzo according to package instructions, about 8-10 minutes. Drain and set aside.
- Heat the olive oil over medium heat in a separate pan. Add the cooked orzo, chicken broth, lemon zest, and lemon juice. Stir until combined and heated through.
- Serve the meatballs over the lemon orzo, topped with crumbled feta cheese.
Notes
Do not skip the breadcrumbs; they keep the meatballs moist. Avoid overmixing the meat mixture.
