Description

A delightful dish combining juicy chicken meatballs with lemony orzo pasta and fresh vegetables.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp fresh parsley, chopped
  • 1 cup orzo pasta
  • 2 cups chicken broth or water
  • 1 lemon (juice and zest)
  • 2 tbsp olive oil
  • 1/2 cup onion, chopped
  • 1/2 cup cherry tomatoes, halved

Instructions

  1. In a large bowl, combine the ground chicken, breadcrumbs, Parmesan, egg, minced garlic, oregano, salt, pepper, and parsley. Mix everything together until well combined and form into meatballs.
  2. Heat olive oil in a large skillet over medium heat. Add meatballs and cook until browned on all sides, about 8-10 minutes. Remove and set aside.
  3. Add chopped onion to the skillet and sauté until translucent, about 3-4 minutes. Then, stir in orzo for 1 minute.
  4. Pour in chicken broth, lemon juice, and lemon zest. Bring to a boil, then reduce heat and simmer until orzo is tender, about 8-10 minutes.
  5. Stir in halved cherry tomatoes and the cooked meatballs. Cook for a few more minutes until everything is heated through.
  6. Drizzle with additional olive oil before serving and garnish with more lemon zest if desired.

Notes

This dish can be customized with different herbs or vegetables. Store leftovers in airtight containers.
