Deliciously seasoned chicken meatballs served over a refreshing lemon orzo, combining bright flavors of Greece.

- 1 lb ground chicken
- 1 egg (room temperature)
- 3/4 cup feta (crumbled)
- 2 tsp oregano
- 1.5 tsp basil
- 1.5 tsp onion powder
- 1 tsp garlic powder
- 1.5 tsp dill
- 1 tsp parsley
- 3/4 tsp salt
- 1/2 tsp pepper
- 1 cup orzo
- 1.5 lemons, zested
- 1 tbsp lemon juice (freshly squeezed)
- 1.5 tbsp olive oil
- 2 tbsp parmesan (freshly grated)
- 3/4 tsp oregano
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp dill
- 1/4 tsp red pepper flakes
Instructions
- Combine the ground chicken, egg, crumbled feta, and spices in a large bowl.
- Mix gently with your hands until just combined.
- Divide the mixture into 15 equal portions and roll each into a ball.
- Heat olive oil in a skillet over medium-high heat.
- Add the meatballs to the skillet and cook for 5-6 minutes until golden-brown.
- Reduce the heat, cover, and cook for an additional 5-6 minutes until cooked through.
- Transfer the meatballs to a plate and set aside.
- Bring a pot of salted water to a boil and cook the orzo according to package directions.
- Combine the cooked orzo with lemon zest, juice, parmesan, oregano, garlic powder, and other spices.
- Toss gently until evenly coated and warm.
- Serve the lemon orzo with the cooked meatballs on top.
Notes
For added freshness, serve with a Greek salad or tzatziki sauce on the side.
