Description

A flavorful Greek chicken marinade made with olive oil, lemon juice, garlic, and herbs that will elevate your chicken with a burst of Mediterranean flavor.


Ingredients

  • ÂĽ cup olive oil
  • 1 tablespoon red wine vinegar (or more to taste)
  • 1 lemon (juice only, about 3 tablespoons)
  • 1 teaspoon honey (or more to taste)
  • 1 teaspoon dried garlic powder
  • 2 teaspoons dried oregano
  • ½ teaspoon salt (or more to taste)
  • ÂĽ teaspoon ground paprika
  • ÂĽ teaspoon ground black pepper
  • 1 lb boneless, skinless chicken breasts

Instructions

  1. In a medium measuring jug, whisk together the olive oil, red wine vinegar, lemon juice, honey, garlic powder, oregano, salt, paprika, and black pepper until well combined.
  2. Place the chicken breasts in a large zip-top bag, pound to even thickness, and pour the marinade over the chicken.
  3. Seal the bag, massage the marinade into the chicken, and refrigerate for at least 30 minutes, up to 2 days.
  4. Before cooking, let the chicken sit at room temperature for 20 minutes. Cook via grilling, stovetop, or baking as preferred.
  5. Let the chicken rest for 5 minutes before serving.

Notes

For enhanced flavor, marinate overnight. Avoid reusing marinade without boiling.
