A flavorful Greek chicken marinade made with olive oil, lemon juice, garlic, and herbs that will elevate your chicken with a burst of Mediterranean flavor.

- ÂĽ cup olive oil
- 1 tablespoon red wine vinegar (or more to taste)
- 1 lemon (juice only, about 3 tablespoons)
- 1 teaspoon honey (or more to taste)
- 1 teaspoon dried garlic powder
- 2 teaspoons dried oregano
- ½ teaspoon salt (or more to taste)
- ÂĽ teaspoon ground paprika
- ÂĽ teaspoon ground black pepper
- 1 lb boneless, skinless chicken breasts
Instructions
- In a medium measuring jug, whisk together the olive oil, red wine vinegar, lemon juice, honey, garlic powder, oregano, salt, paprika, and black pepper until well combined.
- Place the chicken breasts in a large zip-top bag, pound to even thickness, and pour the marinade over the chicken.
- Seal the bag, massage the marinade into the chicken, and refrigerate for at least 30 minutes, up to 2 days.
- Before cooking, let the chicken sit at room temperature for 20 minutes. Cook via grilling, stovetop, or baking as preferred.
- Let the chicken rest for 5 minutes before serving.
Notes
For enhanced flavor, marinate overnight. Avoid reusing marinade without boiling.
