Ingredients

  • 1.5 lbs boneless, skinless chicken breasts (cut into 1-inch cubes)
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 3 cloves garlic (minced)
  • 2 tsp dried oregano
  • 1 tsp dried dill
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup quinoa (uncooked)
  • 1 English cucumber (diced)
  • 1 pint cherry tomatoes (halved)
  • 1/2 red onion (thinly sliced)
  • 1/2 cup Kalamata olives (pitted and halved)
  • 1/2 cup feta cheese (crumbled)
  • 1 cup plain Greek yogurt
  • 1/2 cup cucumber (grated and squeezed dry)
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh dill (chopped)
  • 1/4 tsp salt

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, dill, salt, and pepper to create the marinade.
  2. Marinate the Chicken: Add the cubed chicken to the bowl and toss to coat completely. Cover and refrigerate for at least 30 minutes, or up to 4 hours for better flavor.
  3. Cook the Quinoa: While the chicken marinates, cook the quinoa according to package instructions. Fluff it with a fork once done.
  4. Cook the Chicken: Heat a large skillet over medium-high heat. Add the marinated chicken and cook for 6-8 minutes, stirring occasionally, until golden brown and cooked through.
  5. Make the Tzatziki Sauce: In a small bowl, combine the Greek yogurt, grated and squeezed cucumber, lemon juice, fresh dill, and salt. Stir until well combined.
  6. Assemble the Bowls: Divide the cooked quinoa among four bowls. Top each bowl with cooked chicken, diced cucumber, cherry tomatoes, red onion, and Kalamata olives. Drizzle with tzatziki sauce and sprinkle with crumbled feta cheese.

Notes

Allowing the chicken to marinate enhances the flavor significantly. Rinse quinoa before cooking to remove its natural coating.
