Ingredients

  • 1 cup Granulated Sugar (Adjust to your preferred sweet-tart ratio)
  • 2 large Eggs (Beaten until pale yellow)
  • 2 tablespoons All-Purpose Flour (Helps thicken and stabilize the filling)
  • 1 cup Powdered Sugar (For dusting)
  • 1 cup Whipped Cream (For serving)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine 1 cup of all-purpose flour, 1/2 cup of softened unsalted butter, and 1/4 cup of granulated sugar in a mixing bowl until it resembles coarse crumbs.
  3. Press the mixture into a lightly greased 8×8-inch baking dish and bake for about 15 minutes.
  4. Mix 3/4 cup of fresh grapefruit juice, 2 tablespoons of grapefruit zest, and 1 cup of granulated sugar in a separate bowl until dissolved.
  5. Add 2 beaten eggs and 2 tablespoons of all-purpose flour to the mixture and stir until smooth.
  6. Pour the filling over the baked crust and return it to the oven for an additional 20 to 25 minutes.
  7. Cool on a wire rack, dust with powdered sugar, cut into squares, and serve with whipped cream.
