Instructions
- Preheat the oven to 350°F (175°C).
- Combine 1 cup of all-purpose flour, 1/2 cup of softened unsalted butter, and 1/4 cup of granulated sugar in a mixing bowl until it resembles coarse crumbs.
- Press the mixture into a lightly greased 8×8-inch baking dish and bake for about 15 minutes.
- Mix 3/4 cup of fresh grapefruit juice, 2 tablespoons of grapefruit zest, and 1 cup of granulated sugar in a separate bowl until dissolved.
- Add 2 beaten eggs and 2 tablespoons of all-purpose flour to the mixture and stir until smooth.
- Pour the filling over the baked crust and return it to the oven for an additional 20 to 25 minutes.
- Cool on a wire rack, dust with powdered sugar, cut into squares, and serve with whipped cream.
