Ingredients

  • 10 ounces (285g) High-Quality Dark Chocolate, finely chopped
  • 4 tablespoons (56g) Unsalted Butter, room temperature
  • 1 (14-ounce) can Sweetened Condensed Milk, full-fat
  • 1 teaspoon Pure Vanilla Extract
  • ½ teaspoon Peppermint Extract (adjust to taste)
  • 12 ounces (340g) High-Quality White Chocolate or coating wafers
  • 1 cup (approx. 100g) Candy Canes, crushed finely
  • A pinch Flaky Sea Salt (optional)

Instructions

  1. In a double boiler or microwave, gently melt the dark chocolate and butter together until completely smooth.
  2. Stir in the sweetened condensed milk and vanilla extract until well blended.
  3. Mix in the peppermint extract, adjusting to taste.
  4. Transfer the mixture to a shallow dish, cover, and refrigerate until firm, about 2 hours.
  5. Use a tablespoon measure to scoop out the fudge mixture, rolling it between your palms to form balls.
  6. Return the truffles to the refrigerator for at least 1 hour to firm up.
  7. Melt the white chocolate in a double boiler until silky smooth, then stir in half of the crushed candy canes.
  8. Dip each chilled truffle in the melted white chocolate and sprinkle with remaining candy canes and optional sea salt.
  9. Let the truffles set at room temperature or refrigerate for about 30 minutes before serving or storing.
