Description
Soft cookies stuffed with gooey maple pecan pie filling. A gourmet dessert that combines cookies and pie in one bite.
Ingredients
2 1/2 cups flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 cup butter, softened
1 cup brown sugar
1/2 cup sugar
2 large eggs
1 tsp vanilla extract
1/2 tsp maple extract
Filling:
1/2 cup pecans
1/2 cup corn syrup
1/2 cup brown sugar
2 tbsp butter
1 tsp vanilla
1/2 tsp cinnamon
Pinch salt
Instructions
1. Preheat oven to 350°F (175°C). Line baking sheets.
2. Make filling: cook pecans, corn syrup, sugar, butter, vanilla, cinnamon, salt until thickened; cool.
3. Make dough: cream butter, sugars, eggs, vanilla, maple extract. Stir in dry mix.
4. Flatten dough, add filling, seal edges.
5. Place on baking sheet.
6. Bake 11–13 minutes until golden.
7. Cool before serving.
Notes
Seal dough edges well to avoid leaks.
Chill filled dough before baking.
Freeze cookies up to 2 months.
