- 1 lb beef sirloin
- 8 oz cremini mushrooms
- 1 medium yellow onion
- 3 cloves garlic
- 2 tsp Dijon mustard
- 3/4 cup sour cream
- 1/2 cup beef broth
- 2 tbsp olive oil
- 1 tbsp butter
- 2 tbsp fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Prepare the beef: Slice 1 lb beef sirloin into thin strips that are roughly 1-inch wide. Season the beef pieces with salt and pepper.
- Sear the beef: Heat 1 tbsp of olive oil in a skillet over medium-high heat. When the oil is hot, add the beef in batches. Sear the beef until it is nicely browned, about 1-2 minutes on each side. Once browned, remove the beef from the skillet and set it aside.
- Sauté the vegetables: In the same skillet, add 1 tbsp of olive oil and 1 tbsp of butter. Add in the chopped onion and sauté for about 3 minutes, or until it starts to soften and become translucent. Then add 3 minced garlic cloves and cook them together for another 30 seconds.
- Cook the mushrooms: Next, add 8 oz of sliced cremini mushrooms to the skillet. Sauté the mushrooms for about 5-6 minutes, or until they turn golden brown and release their juices.
- Deglaze the pan: Pour in 1/2 cup of beef broth, using a wooden spoon to scrape any browned bits off the bottom of the skillet. This will add extra flavor to your Stroganoff. Stir in 2 tsp Dijon mustard and let it simmer for about 2 minutes.
- Incorporate the sour cream: Lower the heat to medium-low and stir in 3/4 cup sour cream. Add the cooked beef back into the pan along with any juices. Cook everything together for another 2-3 minutes, ensuring that the beef is warmed through. Be careful not to boil the sauce.
- Add finishing touches: Taste the Beef Stroganoff and season it with salt and pepper as needed. Finally, chop 2 tbsp of fresh parsley and sprinkle it over the dish for garnish.
- Serve: Serve the Beef Stroganoff over noodles, rice, or mashed potatoes for a complete meal.
