- 200g Spaghetti
- 100g Smoked beef belly, diced
- 2 Large eggs
- 50g Parmesan cheese, grated
- 50g Heavy cream
- 1 Clove of garlic, minced
- Salt, to taste
- Pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
- Cook the spaghetti according to package instructions in a pot of salted boiling water for about 8 to 10 minutes until al dente.
- Heat a skillet over medium heat, add diced smoked beef belly, and cook until golden brown, about 5 minutes.
- Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
- In a bowl, whisk together eggs, grated Parmesan cheese, heavy cream, salt, and pepper.
- When the spaghetti is ready, drain it, reserving some pasta water, and add it to the skillet with the crispy beef.
- Remove skillet from heat and quickly mix in the egg mixture, stirring rapidly. Add reserved pasta water as needed for a creamy consistency.
- Serve immediately, garnished with chopped fresh parsley.
Notes
Ensure not to overcook the spaghetti for the best texture. Remove from heat before adding the egg mixture to prevent cooking the eggs too much.
