Description

Delicious no-bake gingerbread truffles coated in white chocolate, perfect for holiday celebrations.


Ingredients

  • 1 cup gingerbread cookie crumbs
  • ½ cup cream cheese, softened
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • 2 tablespoons molasses
  • 1 teaspoon vanilla extract
  • 8 ounces white chocolate, chopped
  • ½ cup crushed pecans or walnuts (optional, for coating)
  • Additional gingerbread cookie crumbs or festive sprinkles (for coating)

Instructions

  1. In a large mixing bowl, combine the gingerbread cookie crumbs, softened cream cheese, ground ginger, ground cinnamon, ground cloves, molasses, and vanilla extract.
  2. Use a spatula or your hands to mix the ingredients together until fully combined and a dough forms.
  3. Cover the bowl with plastic wrap and refrigerate the dough for about 30 minutes.
  4. Remove the dough from the refrigerator, scoop out tablespoon-sized portions, and roll them into small balls.
  5. Place the rolled balls on a parchment-lined baking sheet.
  6. Melt the chopped white chocolate in a microwave-safe bowl in 30-second intervals, stirring in between.
  7. Dip each gingerbread truffle into the melted white chocolate and lift them out with a fork.
  8. Roll the coated truffles in crushed nuts, gingerbread crumbs, or festive sprinkles.
  9. Return the coated truffles to the baking sheet and refrigerate for at least 30 minutes or until the chocolate has set.
  10. Serve on a festive platter or store in an airtight container in the refrigerator.

Notes

Use fresh spices for better flavor. Good quality chocolate will enhance the truffles.
