- 1 cup gingerbread cookie crumbs
- ½ cup cream cheese, softened
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground cloves
- 2 tablespoons molasses
- 1 teaspoon vanilla extract
- 8 ounces white chocolate, chopped
- ½ cup crushed pecans or walnuts (optional, for coating)
- Additional gingerbread cookie crumbs or festive sprinkles (for coating)
Instructions
- In a large mixing bowl, combine the gingerbread cookie crumbs, softened cream cheese, ground ginger, ground cinnamon, ground cloves, molasses, and vanilla extract.
- Use a spatula or your hands to mix the ingredients together until fully combined and a dough forms.
- Cover the bowl with plastic wrap and refrigerate the dough for about 30 minutes.
- Remove the dough from the refrigerator, scoop out tablespoon-sized portions, and roll them into small balls.
- Place the rolled balls on a parchment-lined baking sheet.
- Melt the chopped white chocolate in a microwave-safe bowl in 30-second intervals, stirring in between.
- Dip each gingerbread truffle into the melted white chocolate and lift them out with a fork.
- Roll the coated truffles in crushed nuts, gingerbread crumbs, or festive sprinkles.
- Return the coated truffles to the baking sheet and refrigerate for at least 30 minutes or until the chocolate has set.
- Serve on a festive platter or store in an airtight container in the refrigerator.
Notes
Use fresh spices for better flavor. Good quality chocolate will enhance the truffles.
