Description

Delightful gingerbread cookies flavored with spices and molasses, perfect for decorating or enjoying fresh.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1/2 cup molasses
  • 1 teaspoon vanilla extract
  • Juniper berries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the flour, baking soda, ground ginger, ground cinnamon, ground cloves, and salt. Set aside.
  3. In another bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
  4. Beat in the egg, followed by the molasses and vanilla extract. Mix well until combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until well combined.
  6. If using juniper berries, crush them and fold into the dough.
  7. Roll out the dough on a floured surface to about 1/4 inch thickness and cut into desired shapes using cookie cutters.
  8. Place the cookies on a lined baking sheet and bake for 8-10 minutes or until edges are firm but centers remain soft.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies can be decorated and are best enjoyed fresh out of the oven or with royal icing.
