Delightful gingerbread cookies flavored with spices and molasses, perfect for decorating or enjoying fresh.

- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 3/4 cup butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1/2 cup molasses
- 1 teaspoon vanilla extract
- Juniper berries (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together the flour, baking soda, ground ginger, ground cinnamon, ground cloves, and salt. Set aside.
- In another bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
- Beat in the egg, followed by the molasses and vanilla extract. Mix well until combined.
- Gradually add the dry ingredients to the wet mixture, stirring until well combined.
- If using juniper berries, crush them and fold into the dough.
- Roll out the dough on a floured surface to about 1/4 inch thickness and cut into desired shapes using cookie cutters.
- Place the cookies on a lined baking sheet and bake for 8-10 minutes or until edges are firm but centers remain soft.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
These cookies can be decorated and are best enjoyed fresh out of the oven or with royal icing.
