  • 1 teaspoon vanilla extract (for cheesecake filling)
  • Spiced sugar (for rolling)

Instructions

  1. Whisk together flour, baking soda, ginger, cinnamon, cloves, and salt in a bowl.
  2. Beat the softened butter, brown sugar, and granulated sugar until creamy.
  3. Add in the egg, molasses, and 1 teaspoon of vanilla extract; mix well.
  4. Gradually add the dry ingredients to the wet mixture, blending until combined.
  5. Chill the dough for at least 30 minutes in the refrigerator.
  6. Make the cheesecake filling: beat cream cheese, powdered sugar, and 1 teaspoon of vanilla extract until smooth.
  7. Preheat the oven to 350°F (175°C).
  8. Roll the chilled dough into balls about 1.5 inches in size, flatten slightly, and place about a teaspoon of cheesecake filling in the center. Wrap the dough around the filling and roll it back into a ball.
  9. Roll each ball in spiced sugar to coat.
  10. Place the cookies on a baking sheet and bake for 10-12 minutes or until edges are firm.
  11. Cool the cookies on a wire rack before serving.

Notes

Ensure butter is softened, and don’t skip the chilling step to prevent spreading. Make sure to coat well in spiced sugar for maximum flavor.
