Deliciously soft and spicy ginger molasses cookies with a rich eggnog frosting, perfect for holiday gatherings.

- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1/4 cup molasses
- 1/4 teaspoon vanilla extract
- 1 cup eggnog
- 1 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the flour, baking soda, ginger, cinnamon, cloves, and salt. Set the bowl aside.
- In another large bowl, beat together the softened butter, brown sugar, and granulated sugar until the mixture is creamy.
- Add the egg, molasses, and vanilla extract. Mix until everything is combined well.
- Gradually add the dry mixture to the wet mixture, blending until just combined. Don’t overmix!
- Drop spoonfuls of dough onto a baking sheet. Bake for 8-10 minutes until the edges are set and the centers look soft.
- Let the cookies cool completely on the baking sheet.
- For the frosting, in a bowl, beat together the eggnog and powdered sugar until smooth and creamy.
- Take one cookie and spread frosting on the bottom. Sandwich it with another cookie to create a cookie sandwich.
- Store the cookies in an airtight container to keep them fresh.
Notes
These cookies remain soft and chewy when stored in an airtight container. They can also be frozen for longer storage.
