Description

Delicious Beef Rolls filled with ginger, carrots, and cranberries, perfect for a snack or meal.


Ingredients

  • 1 pound ground beef
  • 3 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1–2 inches fresh ginger, grated
  • 1 tablespoon chili oil
  • 2 tablespoons honey
  • 1 teaspoon sesame oil
  • 1/2 cup finely shredded carrots
  • 1/4 cup dried cranberries, chopped
  • 1/4 cup chopped walnuts
  • 1/4 cup chopped fresh parsley
  • 1/4 cup shredded mozzarella
  • 8–10 egg roll wrappers
  • Cooking oil for frying

Instructions

  1. In a skillet, heat olive oil over medium heat.
  2. Sauté the minced garlic and grated ginger until fragrant.
  3. Add the ground beef and cook until browned.
  4. Stir in the chili oil, honey, and sesame oil, mixing well.
  5. Remove from heat and mix in the carrots, cranberries, walnuts, parsley, and mozzarella.
  6. Lay out the egg roll wrappers and place 2–3 tablespoons of filling on each.
  7. Fold the sides in and roll tightly, sealing with a bit of water.
  8. Heat cooking oil in a deep skillet or fryer to 350°F (175°C).
  9. Fry the rolls until golden brown and crispy, about 3–5 minutes on each side.
  10. Remove and drain on paper towel.
  11. For Sweet Chili Sauce: In a saucepan, combine sugar, honey, water, rice vinegar, grated garlic, red pepper flakes, and paprika.
  12. Mix flour with water and whisk into the sauce; simmer until thickened.
  13. Serve warm with the sauce for dipping.

Notes

Great for parties or a family meal. You can prepare the filling ahead of time.
