- 1 1/2 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 1/2 cup finely chopped pecans
- 1 can (14 ounces) sweetened condensed milk
- 3 large egg yolks
- 4 tablespoons unsalted butter, cut into pieces
- 1 teaspoon vanilla extract, divided use
- 1/4 teaspoon kosher salt, divided use
- 1 1/2 cups sweetened shredded coconut, divided use
- 1 cup chopped pecans, divided use
- 1 1/2 cups heavy cream
- 2 cups semisweet chocolate chips or chopped semisweet chocolate
- 1 cup sweetened shredded coconut for topping (optional)
- 1/2 cup pecan halves or chopped pecans for topping (optional)
- Whipped cream for serving (optional)
Instructions
- Preheat the oven to 350°F (175°C). Lightly grease a 9-inch pie dish.
- Combine graham cracker crumbs, sugar, melted butter, and finely chopped pecans in a medium bowl. Mix until the texture is similar to damp sand.
- Press the crumb mixture into the bottom and up the sides of the prepared pie dish.
- Bake the crust for 8 to 10 minutes until lightly golden. Allow to cool slightly.
- Whisk together sweetened condensed milk and egg yolks in a medium saucepan until smooth.
- Add the 4 tablespoons of butter and mix well. Cook over medium-low heat, stirring constantly until it thickens, about 8 to 10 minutes.
- Remove from heat and stir in 1/2 teaspoon vanilla extract, a pinch of kosher salt, 1 cup of shredded coconut, and 1 cup of chopped pecans.
- Spread the coconut pecan mixture evenly over the bottom of the baked crust.
- Heat heavy cream over medium heat in a small saucepan until it steams, then pour it over the chocolate chips.
- Let sit for 1 to 2 minutes, then whisk until smooth and glossy.
- Stir in the remaining vanilla extract and kosher salt.
- Pour the chocolate filling over the coconut pecan layer and smooth the top.
- Cool to room temperature, cover, and refrigerate for at least 4 hours.
- Sprinkle the top with the remaining shredded coconut and pecans just before serving.
- Slice using a sharp knife dipped in hot water and serve with whipped cream if desired.
Notes
Allow the pie to cool properly for the best texture. Use quality chocolate for an enhanced flavor.
