Description

A rich and fun chocolate cake with a cream cheese topping, coconut, and pecans, featuring a unique cracked appearance.


Ingredients

  • 1 chocolate cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, combine the chocolate cake mix, water, vegetable oil, and eggs. Mix until well combined.
  3. Pour half of the batter into the prepared baking pan.
  4. In a separate bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
  5. Drop spoonfuls of the cream cheese mixture over the batter, then sprinkle with coconut and pecans.
  6. Pour the remaining cake batter over the top, covering most of the filling.
  7. Bake for 40–45 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before serving.

Notes

Use room temperature eggs and cream cheese for better mixing. Let the cake cool completely before cutting to prevent the filling from spreading.
