Description
Juicy, flavorful garlic parmesan chicken meatloaves baked in mini form for perfect portions. Cheesy tops and packed with comfort.
Ingredients
1 lb ground chicken
½ cup grated parmesan cheese
2 garlic cloves, minced
½ cup breadcrumbs
1 egg
1 tsp Italian seasoning
¾ tsp salt
¼ tsp black pepper
2 tbsp fresh parsley (optional)
Extra parmesan for topping
Instructions
1. Preheat oven to 375°F. Grease muffin tin or mini loaf pan.
2. In a large bowl, combine chicken, parmesan, garlic, breadcrumbs, egg, and seasoning.
3. Gently mix until just combined. Divide into 6–8 portions and shape.
4. Place into pan and top with extra parmesan.
5. Bake 22–26 minutes or until internal temp is 165°F.
6. Let rest for 5 minutes before serving.
Notes
Use almond flour for gluten-free option.
Brush with garlic butter at the end for added richness.
Serve with mashed potatoes or roasted veggies.
