Description

A one-pot meal blending tender chicken with creamy garlic Parmesan rice, perfect for a comforting family dinner.

Ingredients

Scale
  • 1 pound chicken tenders
  • 1 cup long-grain rice
  • 3 cups chicken broth
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Ingredients: Start by gathering all the necessary ingredients.
  2. Cook the Chicken: In a large pot or deep skillet, heat the olive oil over medium heat. Add the chicken tenders, seasoning them with salt, pepper, onion powder, and Italian seasoning. Cook for about 5-7 minutes on each side until they are golden brown and cooked through. Remove the chicken and set it aside.
  3. Sauté the Garlic: In the same pot, lower the heat and add the minced garlic. Sauté for about 1-2 minutes until fragrant but not burnt.
  4. Add the Rice: Next, add the rice to the pot and toast it with the garlic for about 2-3 minutes, stirring frequently.
  5. Pour in the Broth: Slowly pour in the chicken broth, making sure to scrape up any bits stuck to the bottom of the pot. Bring the mixture to a boil.
  6. Combine Chicken and Rice: Once boiling, reduce the heat to low and add the cooked chicken tenders back into the pot. Cover and simmer for about 15-20 minutes until the rice is tender and has absorbed the broth.
  7. Add Parmesan: After cooking, remove the pot from heat and stir in the grated Parmesan cheese. Mix well until the cheese is melted and fully combined.
  8. Garnish: Serve hot, garnished with freshly chopped parsley for a pop of color and added flavor.

Notes

Store any leftovers in an airtight container in the refrigerator for about 3-4 days. Reheat with a splash of chicken broth to keep the rice moist.
