- 4 medium chicken thighs (bone-in, skin-on)
- 1 pound baby potatoes, halved
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1 teaspoon dried Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (for garnish, optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the olive oil, minced garlic, dried Italian seasoning, salt, pepper, and half of the grated Parmesan cheese in a large mixing bowl to make the marinade.
- Coat the chicken thighs in the marinade and let them sit for a few minutes to absorb the flavors.
- Arrange the halved baby potatoes on a baking sheet and drizzle them with olive oil, then sprinkle with salt and pepper.
- Place the marinated chicken thighs on the same baking sheet among the potatoes, skin-side up.
- Sprinkle the remaining Parmesan cheese over the chicken and potatoes.
- Bake in the preheated oven for 35-40 minutes until the chicken is cooked through and the potatoes are fork-tender.
- Optional: For extra crispy skin, turn on the broiler for an additional 2-3 minutes.
- Let the dish rest for a few minutes, then garnish with fresh parsley before serving.
Notes
Allow the chicken to marinate for at least 15-30 minutes for enhanced flavor. Ensure potato halves are of uniform size for even cooking.
