Ingredients

  • 4 medium chicken thighs (bone-in, skin-on)
  • 1 pound baby potatoes, halved
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish, optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the olive oil, minced garlic, dried Italian seasoning, salt, pepper, and half of the grated Parmesan cheese in a large mixing bowl to make the marinade.
  3. Coat the chicken thighs in the marinade and let them sit for a few minutes to absorb the flavors.
  4. Arrange the halved baby potatoes on a baking sheet and drizzle them with olive oil, then sprinkle with salt and pepper.
  5. Place the marinated chicken thighs on the same baking sheet among the potatoes, skin-side up.
  6. Sprinkle the remaining Parmesan cheese over the chicken and potatoes.
  7. Bake in the preheated oven for 35-40 minutes until the chicken is cooked through and the potatoes are fork-tender.
  8. Optional: For extra crispy skin, turn on the broiler for an additional 2-3 minutes.
  9. Let the dish rest for a few minutes, then garnish with fresh parsley before serving.

Notes

Allow the chicken to marinate for at least 15-30 minutes for enhanced flavor. Ensure potato halves are of uniform size for even cooking.
