A creamy and cheesy comfort food made with tender chicken and savory baby potatoes, all cooked to perfection in a pressure cooker.


Ingredients

  • 1 pound chicken tenderloins (cut into bite-size pieces)
  • 1 pound baby potatoes (halved)
  • 2 tablespoons oil (divided use)
  • 1 ½ teaspoons paprika
  • 1 ½ teaspoons poultry seasoning
  • 1 teaspoon black pepper
  • 2 tablespoons butter
  • 2 cloves garlic (minced)
  • ½ cup garlic parmesan wing sauce
  • 2 cups shredded mozzarella

Instructions

  1. Prepare the Chicken and Potatoes: Start by cutting your chicken tenderloins into bite-sized pieces. Halve the baby potatoes and set both aside for later use.
  2. Season the Chicken: In a large bowl, combine the chicken with paprika, poultry seasoning, and black pepper. Make sure the chicken is well coated with the spices.
  3. Sauté in the Pressure Cooker: Turn your pressure cooker to the sauté mode. Add 1 tablespoon of oil and let it heat up. Once hot, add the seasoned chicken to the pot. Cook for about 5 minutes, stirring occasionally, until the chicken is browned on all sides. Remove the chicken and set it aside.
  4. Cook the Potatoes: Add the remaining tablespoon of oil to the pot. Toss in the halved baby potatoes and sauté for 3-4 minutes, just until they begin to brown.
  5. Add Garlic and Butter: Push the potatoes to one side of the pot. In the cleared space, add 2 tablespoons of butter and the minced garlic. Stir the garlic until fragrant, about 30 seconds.
  6. Combine and Pressure Cook: Add the cooked chicken back into the pot. Pour the garlic parmesan wing sauce over the chicken and potatoes. Close the lid of the pressure cooker, ensuring the vent is closed. Cook on high pressure for 8 minutes.
  7. Release Pressure: Once cooking is done, carefully release the pressure manually. Open the lid and add the shredded mozzarella on top. Close the lid again for about 5 minutes to allow the cheese to melt.
  8. Serve: Once the cheese has melted, stir the mixture gently to combine everything. Serve hot and enjoy!

Notes

Don’t skip browning the chicken for better flavor. Ensure proper sealing of the pressure cooker.
