Tender lamb rib chops covered in a flavorful mix of garlic and herbs, perfect for special occasions or family dinners.
Ingredients

- 2 lbs lamb rib chops
- 5 cloves garlic, pressed
- 4 Tbsp olive oil (Divided)
- 2 Tbsp fresh parsley (Or 2 tsp dried parsley)
- 2 tsp hot sauce
- 1 tsp fine sea salt
- 1 tsp black pepper
- 1/4 tsp dried thyme
- 1/2 cup chicken stock
- 2 Tbsp unsalted butter
Instructions
- In a bowl, mix together the garlic, 2 tablespoons of olive oil, parsley, hot sauce, salt, black pepper, and thyme. Rub this mixture all over the lamb chops. Let them marinate for at least 30 minutes.
- Preheat your oven to 400°F (200°C).
- Heat the remaining 2 tablespoons of olive oil in a large oven-proof skillet over medium-high heat. Sear the marinated lamb chops for about 3-4 minutes on each side until golden brown.
- Carefully add the chicken stock to the skillet and transfer it to the preheated oven.
- Bake for about 10-15 minutes, or until the internal temperature reaches 145°F (63°C) for medium-rare.
- Add the unsalted butter to the skillet after removing it from the oven, allowing it to melt and spoon it over the lamb chops.
- Serve hot, drizzling some cooking juices from the skillet over the lamb.
Notes
Lamb pairs well with garlic mashed potatoes, roasted vegetables, couscous, or a fresh salad.
