Description

Tender lamb rib chops covered in a flavorful mix of garlic and herbs, perfect for special occasions or family dinners.


Ingredients

  • 2 lbs lamb rib chops
  • 5 cloves garlic, pressed
  • 4 Tbsp olive oil (Divided)
  • 2 Tbsp fresh parsley (Or 2 tsp dried parsley)
  • 2 tsp hot sauce
  • 1 tsp fine sea salt
  • 1 tsp black pepper
  • 1/4 tsp dried thyme
  • 1/2 cup chicken stock
  • 2 Tbsp unsalted butter

Instructions

  1. In a bowl, mix together the garlic, 2 tablespoons of olive oil, parsley, hot sauce, salt, black pepper, and thyme. Rub this mixture all over the lamb chops. Let them marinate for at least 30 minutes.
  2. Preheat your oven to 400°F (200°C).
  3. Heat the remaining 2 tablespoons of olive oil in a large oven-proof skillet over medium-high heat. Sear the marinated lamb chops for about 3-4 minutes on each side until golden brown.
  4. Carefully add the chicken stock to the skillet and transfer it to the preheated oven.
  5. Bake for about 10-15 minutes, or until the internal temperature reaches 145°F (63°C) for medium-rare.
  6. Add the unsalted butter to the skillet after removing it from the oven, allowing it to melt and spoon it over the lamb chops.
  7. Serve hot, drizzling some cooking juices from the skillet over the lamb.

Notes

Lamb pairs well with garlic mashed potatoes, roasted vegetables, couscous, or a fresh salad.
