  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 8 oz (225g) rigatoni pasta
  • 1 cup heavy cream
  • 1 cup shredded cheese (like Parmesan or cheddar)
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1/4 cup finely chopped onions
  • 1/4 cup chopped spinach (optional)

Instructions

  1. Start by boiling a large pot of water. Add a pinch of salt and the rigatoni. Cook according to package instructions until al dente.
  2. Drain the pasta and set it aside.
  3. In a skillet, heat olive oil over medium heat. Add chopped onions and sauté until they become soft and translucent.
  4. Pour in the heavy cream, garlic powder, salt, and pepper. Stir well to combine.
  5. Gradually add the shredded cheese, stirring until melted and creamy. If using, add chopped spinach for extra flavor and color.
  6. Combine the cooked rigatoni with the sauce and mix until the pasta is well coated. Set aside.
  7. In another skillet, melt the butter over medium-high heat.
  8. Season the steak pieces with salt and pepper. Once the butter is bubbling, add the steak bites to the skillet in a single layer.
  9. Cook for about 3-4 minutes, turning to brown them on all sides.
  10. Add the minced garlic in the last minute of cooking. Ensure you don’t burn the garlic as it can turn bitter.
  11. Once the steak bites are done, serve them over the creamy cheesy rigatoni.
