- 1.5 pounds baby potatoes
- 4 cloves garlic, minced
- 2 tablespoons butter, melted

- 1/2 teaspoon pepper
- Fresh parsley (optional for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Clean the baby potatoes and cut them in half if they’re larger.
- In a bowl, combine melted butter, minced garlic, olive oil, salt, and pepper.
- Toss the potatoes in the garlic butter mixture until well coated.
- Spread the potatoes out on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes or until golden and crispy, flipping halfway through.
- Remove from the oven and garnish with fresh parsley if desired. Serve warm.

Make sure the potatoes sit in a single layer to get crispy. You can add variations like cheese or herbs to enhance the flavor.
