Ingredients

- 1 small head cabbage (chopped into dice)
- 10 stalks celery (diced)
- 6 carrots (scrubbed and diced)
- 3 onions (peeled and chopped)
- 2 bell peppers (chopped)
- 1 envelope Lipton’s Onion Soup Mix (or 1/2 recipe of homemade mix)
- 29 oz whole tomatoes with juice (crushed or diced)
- 15 oz beef or vegetable broth (low sodium preferred)
- 2 quarts tomato juice or V-8 juice (low sodium works best)
- Water (just enough to cover vegetables)
- 1 can green beans (drained)
Instructions
- Begin by chopping all your vegetables: cabbage, celery, carrots, onions, and bell peppers. Make sure to have them diced into even pieces for consistent cooking.
- Place all the chopped vegetables into your pressure cooker.
- Add the Lipton’s Onion Soup Mix or your homemade version, the whole tomatoes with juice, and the broth.
- Pour in the tomato juice or V-8 juice. Add enough water to just cover all the vegetables.
- Secure the lid of your pressure cooker and set it to high pressure. Cook for about 10 minutes.
- Once the cooking time is complete, do a quick release of the pressure and open the lid carefully.
- Stir in the drained green beans, and let the soup sit for a few minutes for the flavors to meld together.
- Serve hot and enjoy your delicious and healthy cabbage soup!
