Ingredients

  • 1 bag of Fritos corn chips
  • 2 cups of mixed lettuce (romaine, spinach, and arugula)
  • 1 cup of cherry tomatoes, halved
  • 1 cup of cucumbers, diced
  • 1 bell pepper, chopped
  • 1 avocado, diced
  • 1 can of black beans, rinsed and drained
  • ½ cup of corn (fresh or canned)
  • ½ cup of shredded cheese (cheddar or Mexican blend)
  • ½ cup of cilantro, chopped (optional)
  • ½ cup of salsa (for dressing)
  • Lime wedges (for garnish)
  • Salt and pepper to taste

Instructions

  1. Prepare the Veggies: Start by washing all the fresh vegetables. Chop the lettuce, dice the cucumbers, chop the bell pepper, halve the cherry tomatoes, and dice the avocado.
  2. Mix the Salad Base: In a large bowl, combine the mixed lettuce, cherry tomatoes, cucumbers, bell pepper, avocado, black beans, corn, and shredded cheese. Toss them gently to combine.
  3. Add the Fritos: Just before serving, add the Fritos corn chips to the salad. This keeps them crunchy and enjoyable.
  4. Dress the Salad: Drizzle salsa over the salad. You can use as much or as little as you prefer. Toss everything gently to mix the salsa evenly throughout.
  5. Season: Taste the salad and add salt and pepper according to your liking.
  6. Serve: Serve the salad immediately, garnished with cilantro and lime wedges for an extra zing!
