Description
A refreshing and crunchy salad made with cabbage, black beans, corn, and topped with Fritos, perfect for any occasion.
Ingredients

- 1 small head of green cabbage, shredded
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels (fresh or canned)
- 1 cup canned black beans, rinsed and drained
- 1/2 cup red onion, finely diced
- 1/2 cup shredded cheddar cheese
- 1 cup Fritos corn chips
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Clean the cabbage, remove wilted leaves, cut in half, and shred.
- Add shredded cabbage to a large mixing bowl.
- Rinse and halve the cherry tomatoes, then add to the bowl.
- Add corn kernels (fresh or canned) to the bowl.
- Rinse and drain black beans, then add to the mixture along with diced red onion.
- In a small bowl, mix mayonnaise, sour cream, lime juice, chili powder, salt, and pepper until smooth.
- Pour the dressing over the salad mixture and toss gently to coat.
- Just before serving, sprinkle shredded cheddar cheese and Fritos on top, then toss lightly.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
Notes
For best results, add Fritos just before serving to keep them crunchy.
