Description

A refreshing and crunchy salad made with cabbage, black beans, corn, and topped with Fritos, perfect for any occasion.


Ingredients

  • 1 small head of green cabbage, shredded
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels (fresh or canned)
  • 1 cup canned black beans, rinsed and drained
  • 1/2 cup red onion, finely diced
  • 1/2 cup shredded cheddar cheese
  • 1 cup Fritos corn chips
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Clean the cabbage, remove wilted leaves, cut in half, and shred.
  2. Add shredded cabbage to a large mixing bowl.
  3. Rinse and halve the cherry tomatoes, then add to the bowl.
  4. Add corn kernels (fresh or canned) to the bowl.
  5. Rinse and drain black beans, then add to the mixture along with diced red onion.
  6. In a small bowl, mix mayonnaise, sour cream, lime juice, chili powder, salt, and pepper until smooth.
  7. Pour the dressing over the salad mixture and toss gently to coat.
  8. Just before serving, sprinkle shredded cheddar cheese and Fritos on top, then toss lightly.
  9. Serve immediately or chill in the refrigerator for 30 minutes before serving.

Notes

For best results, add Fritos just before serving to keep them crunchy.
