  • 1 cup flour

  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 eggs
  • 1 cup breadcrumbs
  • Oil for frying
  • 3 cups cooked rice (white or brown)
  • 1 cup shredded cabbage or lettuce
  • 1 ripe avocado, sliced
  • 1 cup diced tomatoes
  • 1/2 cup salsa
  • Lime wedges for serving
  • Fresh cilantro for garnish (optional)

Instructions

  1. Start by preparing the fish. Cut the fish fillets into bite-sized pieces.
  2. Mix flour, paprika, cumin, salt, and black pepper in a bowl.
  3. Beat the eggs until smooth in another bowl.
  4. Place the breadcrumbs in a separate shallow dish.
  5. Dip each piece of fish into the flour mixture, then into the beaten eggs, and finally coat with breadcrumbs.
  6. Heat enough oil in a frying pan over medium heat for frying.
  7. Add the coated fish pieces in batches to the hot oil. Fry until golden brown and cooked through, about 3-4 minutes per side.
  8. Remove the fish from the pan and let it drain on paper towels.
  9. To assemble the taco bowls, take a serving bowl and add a layer of cooked rice.
  10. Top the rice with fried fish, shredded cabbage or lettuce, diced tomatoes, avocado slices, and a dollop of salsa.
