Instructions
- Melt the butter and olive oil in a large pot over medium heat.
- Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 20-25 minutes.
- Stir in the thyme, salt, and pepper.
- Add the rice to the pot and stir to coat the grains with the onion mixture.
- Pour in the beef broth and bring to a boil.

- Fluff the rice with a fork and stir in the Gruyère cheese until melted.
