Description
Crispy tortilla roll ups filled with roast beef and melted cheese, served with a flavorful au jus dip.

- 8 large flour tortillas
- 1 lb deli roast beef, thinly sliced
- 2 cups shredded provolone or mozzarella cheese
- 2 tbsp butter, melted
- 1 tsp garlic powder
- ½ tsp onion powder
- 1 packet au jus gravy mix
- 2 cups water
- Optional: chopped parsley for garnish
Instructions
- Preheat your oven to 375°F. Line a baking sheet with parchment paper or lightly grease a baking dish.
- Lay the tortillas flat. Evenly layer the roast beef over each tortilla, then sprinkle generously with shredded cheese.
- Roll each tortilla tightly around the filling and place seam-side down in the prepared baking dish.
- In a small bowl, mix melted butter with garlic powder and onion powder. Brush the mixture evenly over the tortillas.
- Bake for 18–22 minutes, until the tortillas are golden brown and the cheese is fully melted.
- While the roll ups bake, prepare the au jus using the gravy mix and water according to package directions.
- Remove from the oven, let rest briefly, then slice in half if desired. Garnish with parsley and serve warm with au jus.
Notes
Serve immediately for the best texture and melt. Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 2 months.
