Instructions
- In a mixing bowl, combine the flour, eggs, milk, melted butter, salt, and sugar (if using). Whisk together until you have a smooth batter.
- Heat a non-stick skillet over medium heat and lightly grease it with butter or oil.
- Pour a small amount of batter into the hot skillet and swirl quickly to cover the surface. Cook for 1-2 minutes, until the edges lift and turn golden.
- Flip the crepe and cook for another minute.
- Repeat with remaining batter, adjusting heat as necessary to prevent burning.
- Fill the crepes with desired fillings, fold, and serve warm.
Notes
Making the batter ahead of time is fine; store in the fridge and whisk before using. Practice makes perfect for cooking the crepes.
