Description

Thin, delicate French crepes that can be filled with a variety of sweet or savory options.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/2 cups milk
  • 2 tablespoons melted butter
  • 1/4 teaspoon salt
  • 1 tablespoon sugar (optional, for sweet crepes)
  • Fillings of choice (e.g., Nutella, fruits, whipped cream, ham, cheese, etc.)

Instructions

  1. In a mixing bowl, combine the flour, eggs, milk, melted butter, salt, and sugar (if using). Whisk together until you have a smooth batter.
  2. Heat a non-stick skillet over medium heat and lightly grease it with butter or oil.
  3. Pour a small amount of batter into the hot skillet and swirl quickly to cover the surface. Cook for 1-2 minutes, until the edges lift and turn golden.
  4. Flip the crepe and cook for another minute.
  5. Repeat with remaining batter, adjusting heat as necessary to prevent burning.
  6. Fill the crepes with desired fillings, fold, and serve warm.

Notes

Making the batter ahead of time is fine; store in the fridge and whisk before using. Practice makes perfect for cooking the crepes.
